Roasted eggplant and tomato curry

  • 600g baby aubergines, sliced
  • 3 tbsp olive oil
  • 2 onions, finely chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon garam masala
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 400 ml can of chopped tomatoes
  • 400 ml can of coconut milk
  • Pinch of sugar (optional)
  • ½ small packet of coriander, coarsely chopped
  • Rice or chapatis to serve

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Fry the aubergines in a roasting pan with 2 tablespoons of olive oil, season well and spread.
  3. Roast for 20 minutes until dark golden and tender.
  4. Heat the remaining oil in an ovenproof pan or ovenproof casserole dish.
  5. Cook the onions over medium heat for 5-6 minutes until soft.
  6. Stir in the garlic and spices for a few minutes until the spices develop their aroma.
  7. Add tomatoes, coconut milk and roasted eggplant and simmer gently.
  8. Simmer for 20-25 minutes, removing the lid for the last 5 minutes to thicken the sauce.
  9. Add some spice to taste and a pinch of sugar if necessary.
  10. Stir in most of the coriander.
  11. Serve over rice or with chapatis and sprinkle with the remaining coriander.
