  • 2kg floury potatoes such as King Edward or Maris Piper, peeled
  • 1 lemon
  • 1 tbsp coarse sea salt
  • 1 extra large fresh chicken, about 2.7kg
  • 6 sprigs rosemary, plus extra for garnish
  • 4 tbsp olive oil
  • 400ml fresh chicken stock (buy two 300ml cups and use the rest for the salad)

Preparation steps

  1. Preheat the oven to 220°C/fan 200°C/gas 7.
  2. Cut the potatoes into two bite-sized pieces and place them in a large pot of salted water.
  3. Bring the potatoes to the boil and cook for 5 minutes, then drain.
  4. In a large, sturdy roasting pan, heat the olive oil for 5 minutes.
  5. Put the potatoes in the roaster and let them cook for 20 minutes.
  6. Peel the zest from the lemon with a vegetable peeler and cut into thin slices.
  7. Mix lemon peel with sea salt.

  19. Remove the roasting pan from the oven and transfer the chicken to a serving platter. To keep warm, cover with foil and let rest for 20 minutes.
  20. Put the potatoes in an ovenproof dish and put them back in the oven to crisp up.
  21. Pour the fat out of the roaster and place the roaster on the stove over low to medium heat.
  22. Add half the stock to the can and bring to a simmer, stirring and scraping up any brown residue.
  23. Cook the broth until it reduces and becomes darker and syrupy.
  24. Add the rest of the broth and simmer again until it bubbles and reduces.
  25. Taste the sauce, adjust the seasoning if necessary, then pour it through a sieve into a preheated sauce pitcher.
  26. Stack the crispy potatoes around the chicken and garnish with the remaining rosemary sprigs.
  27. Serve the chicken with the sauce and braised salad.
  28. If freezing, freeze the chicken for up to a month at the end of Step 2. Defrost thoroughly before continuing with the recipe.
