Ingredients

  • 1 tbsp olive oil or rapeseed oil
  • piece of butter
  • 1 large onion, halved and sliced
  • 6 sausages or 8 chipolatas (pork leftovers in blankets are also fine)
  • 2 tsp English mustard powder
  • 50g plain flour
  • 1 chicken bouillon cube, crumbled
  • 150 ml white wine
  • 500 ml chicken stock or leftover sauce
  • 6 filling balls, leftover or store bought
  • 300g cooked turkey, shredded
  • 1 tbsp whole grain mustard
  • 100 g low-fat crème fraîche
  • small bunch of parsley, chopped
  • 800g leftover fried potatoes
  • 20 g mature cheddar, grated

Preparation steps

  1. Heat oil and butter in a large, shallow ovenproof baking dish.
  2. Add the onion and cook for 10 minutes until really soft.
  3. Push the onion to one side of the bowl, add the sausages and brown them all over (skip this step if using cooked leftovers).
  4. Remove the sausages from the mold and let them cool slightly.
  5. Stir mustard powder, flour and bouillon cubes into the oil and butter for 1-2 minutes, then add the white wine.
  6. Let it bubble for 1 minute, scraping the bottom of the bowl to remove any tasty bits, then add the broth.
  7. Stir until a smooth sauce forms, season and let bubble for 5 minutes.
  8. Preheat oven to 200°C/180°C fan/gas 6.
  9. Cut the sausage and stuffing into bite-sized pieces and add to the sauce with the turkey, mustard, crème fraîche and parsley.
  10. When it bubbles, remove from heat.
  11. Using your hands, crumble the potatoes over the filling so you have larger and smaller pieces.
  12. Sprinkle with cheese and bake for 40 minutes, until the potatoes are crispy and the filling is bubbling around the edges.
