Ingredients

  • 1 large duck breast with skin
  • 2 duck legs
  • 50 g light muscovado sugar
  • 100 ml sherry vinegar
  • 150 ml good chicken stock
  • piece of butter

Preparation steps

  1. Mix spices, thyme and zest.
  2. Score the skin of the breast, cutting through the fat but not the meat.
  3. Rub the breast and legs with the spice mixture.
  4. Leave the spice-rubbed duck in the refrigerator for at least 2 hours or up to 24 hours.
  5. Preheat the oven to 160°C/fan 140°C/gas 3.
  6. Place the legs in an ovenproof pan or small roasting pan and season well.
  7. Roast the legs for 1½ hours until deep golden and crispy.
  8. Place the legs on a plate and keep warm in a low oven or allow to cool.
  9. Spoon off any excess fat from the pan juices and reserve for later use.
  10. Remove the meat and skin from the legs, tear into pieces with two forks and mix.
  11. If preparing the meat in advance, keep the meat warm or reheat it in a hot oven for 10 minutes before serving.
  12. Place the pan back on the heat and add the sugar for the sauce.
  13. Allow the sugar to melt and turn dark golden.
  14. Add the vinegar and then reduce by about half.
  15. Add the clementine juice and almost all of the stock.
  16. Allow the sauce to bubble until reduced and syrupy.
  17. Stir in butter and season to taste.
  18. Heat a frying pan.
  19. Cook the breast, skin side down, until very crispy and the fat has rendered, 10-12 minutes.
  20. Flip the breast over and cook until pink, 5 minutes more.
  21. Remove the breast to a plate and let it rest, uncovered, for 10 minutes.
  22. Spoon remaining fat from the pan.
  23. Add the leftover broth to the pan and stir to dissolve any tasty bits of meat.
  24. Add the pan mixture to the sauce.
  25. Cut the breast diagonally.
  26. Divide half of the leg meat into small piles on 2 warm plates.
  27. Cover the leg meat with breast slices.
  28. Pour the sauce over the meat.
  29. Serve with glazed vegetables and potatoes.
