  • 1 tbsp black peppercorns
  • 1 tbsp English mustard powder
  • 1 tbsp dried thyme
  • 1 tsp celery seeds
  • 1 tbsp olive oil
  • about 2kg/4lb 8oz beef tenderloin on top
  • 4 tbsp flour
  • 2 beef bouillon cubes
  • 3 tbsp caramelized onion chutney or jam
  • 2-3 tsp Marmite

Preparation steps

  1. Crush the peppercorns, mustard powder, thyme and celery seeds together with a little salt in a mortar.
  2. Stir in the oil and rub the beef with it.
  3. If you have time, cover the roast and refrigerate it overnight to marinate. Remove the beef from the refrigerator 1 hour before roasting.
  4. Preheat the oven to 190°C/170°C fan/Gas 5 and place the roast in a comfortable roasting tin.
  5. Roast 12 minutes per 450g/1 pound (approx. 55 minutes for a 2kg/4lb 8oz roast) for medium-rare, or 15 minutes per 450g/1 pound (approx. 1 hour and 10 minutes) for medium -good.
  6. Remove from the oven, transfer to a plate, cover with foil and let rest for 30 minutes.
  7. When cooking the Yorkies (p. 90), increase the oven temperature to 220°C/200°C fan/gas 7.
  8. To make the sauce, pour the gravy from the roasting pan into a jug.

  13. Gradually stir in 750 ml of hot water from the kettle.
