  • small piece of butter
  • 1 large leek, thinly sliced
  • 300 g risotto rice, e.g. B. Arborio or Carnaroli
  • 700 ml fish or vegetable stock
  • 250 ml whole milk
  • 375g undyed, smoked haddock, skinned and cut into large pieces
  • 3 tbsp crème fraîche
  • 100g baby spinach

Not a fan of fish? Prepare risotto as above, but leave out
the smoked haddock. Stir in at the end
1 bunch of finely chopped spring onions
Serve in place of the spinach and serve
Bowls of crispy bacon strips.

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Heat the butter in a large ovenproof dish over medium heat.
  3. Cook the leeks until just tender, 4-5 minutes, stirring regularly.
  4. Add the rice and stir for another 2 minutes.
  5. Add the broth and milk, bring to the boil and simmer for 5 minutes.
  6. Place the haddock on top of the mixture.
  7. Cover with a lid or foil and bake in the oven for 18 minutes until the rice is tender.
  8. Fold in the crème fraîche and spinach.
  9. Season with plenty of black pepper.
  10. Cover the pan again and let it rest outside the oven for 3 minutes.
