Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 2 large shallots, finely chopped
- 1 garlic clove, minced
- 3 skinless chicken breast fillets, cut into large pieces
- 300g pearl barley
- 250 ml white wine
- 400g mixed wild and chestnut mushrooms, chopped
- 1 tbsp thyme leaf
- 1l hot chicken broth
- 3 tbsp grated Parmesan
- chopped chives for serving (optional)
- Parmesan shavings for serving (optional)
Preparation steps
- Heat butter and oil in a large, heavy pot.
- Fry the shallots and garlic with some spices for 5 minutes.
- Stir in the chicken and cook for 2 minutes.
- Add the barley and cook for 1 minute.
- Pour in the wine and stir until absorbed.
- Add mushrooms and thyme.
- Pour ¾ of the broth over it.
- Simmer on low for 40 minutes until barley is tender, stirring occasionally.
- Add remaining broth if it looks dry.
- Remove from the heat and stir in the grated Parmesan.
- Serve immediately, sprinkled with chives and parmesan shavings if desired.
