Risotto with barley, chicken and mushrooms

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 large shallots, finely chopped
  • 1 garlic clove, minced
  • 3 skinless chicken breast fillets, cut into large pieces
  • 300g pearl barley
  • 250 ml white wine
  • 400g mixed wild and chestnut mushrooms, chopped
  • 1 tbsp thyme leaf
  • 1l hot chicken broth
  • 3 tbsp grated Parmesan
  • chopped chives for serving (optional)
  • Parmesan shavings for serving (optional)

Preparation steps

  1. Heat butter and oil in a large, heavy pot.
  2. Fry the shallots and garlic with some spices for 5 minutes.
  3. Stir in the chicken and cook for 2 minutes.
  4. Add the barley and cook for 1 minute.
  5. Pour in the wine and stir until absorbed.
  6. Add mushrooms and thyme.
  7. Pour ¾ of the broth over it.
  8. Simmer on low for 40 minutes until barley is tender, stirring occasionally.
  9. Add remaining broth if it looks dry.
  10. Remove from the heat and stir in the grated Parmesan.
  11. Serve immediately, sprinkled with chives and parmesan shavings if desired.
