- 175g powdered sugar
- 175g rhubarb, halved lengthwise and then diced
- 2 tbsp sunflower oil
- 1 egg
- 1 tsp vanilla extract
- 125 ml buttermilk
- 200g plain flour
- 1 teaspoon Baking powder
- 1 tsp baking soda
- 50 g light muscovado sugar
- 50g plain flour
- 25g porridge
- 1 tsp ground cinnamon
- 50g butter
- Preheat oven to 220°C/200°C fan/gas 7.
- Line a 12-hole muffin tin with paper muffin cups.
- Mix together the sugar and rhubarb and set aside while you prepare the streusel topping.
- Mix the muscovado sugar with the flour, oat flakes and cinnamon.
- Rub the butter with your fingertips until it is lumpy.
- Stir the oil and egg, vanilla and buttermilk into the sugary rhubarb (don’t worry if it’s a little juicy).
- Add flour, baking powder and baking soda and mix well.
- Quickly pour into the molds and spread a thick layer of the streusel mixture on top of each.
- Bake for 15-18 minutes, until the batter is golden brown and a cocktail pick inserted into the center of a muffin comes out clean.
- Cool on a wire rack.
