Rhubarb Streusel Muffins

  • 175g powdered sugar
  • 175g rhubarb, halved lengthwise and then diced
  • 2 tbsp sunflower oil
  • 1 egg
  • 1 tsp vanilla extract
  • 125 ml buttermilk
  • 200g plain flour
  • 1 teaspoon Baking powder
  • 1 tsp baking soda
  • 50 g light muscovado sugar
  • 50g plain flour
  • 25g porridge
  • 1 tsp ground cinnamon
  • 50g butter

Preparation steps

  1. Preheat oven to 220°C/200°C fan/gas 7.
  2. Line a 12-hole muffin tin with paper muffin cups.
  3. Mix together the sugar and rhubarb and set aside while you prepare the streusel topping.
  4. Mix the muscovado sugar with the flour, oat flakes and cinnamon.
  5. Rub the butter with your fingertips until it is lumpy.
  6. Stir the oil and egg, vanilla and buttermilk into the sugary rhubarb (don’t worry if it’s a little juicy).
  7. Add flour, baking powder and baking soda and mix well.
  8. Quickly pour into the molds and spread a thick layer of the streusel mixture on top of each.
  9. Bake for 15-18 minutes, until the batter is golden brown and a cocktail pick inserted into the center of a muffin comes out clean.
  10. Cool on a wire rack.
