- ½ roasted rhubarb (see “goes well with this” below)
- 140g light muscovado sugar
- 75 ml vegetable oil
- 1 egg
- Peel 1 orange, finely grated
- 284 ml carton sour cream
- 300g self-raising flour
- 8 tbsp ready-made thick Devon pudding from a box
- golden powdered sugar for sprinkling
- Prepare the roasted rhubarb, cool it and drain the juice (the juice mixes well with natural yogurt).
- Preheat the oven to 180°C/fan 160°C/gas 4.
- Line a 12-hole muffin tin with muffin paper cases.
- In a large bowl, stir together the sugar, oil, egg, orange zest and sour cream until there are no lumps and everything is completely combined.
- Gently mix in the flour and then fold in the rhubarb.
- Divide 3-4 of the batter evenly between the paper liners, filling them generously.
- Using a spoon, press into the center of each muffin to make a dip.
- Top each dip with a small dollop of chilled custard, then gently spread the rest of the muffin mixture over the custard.
- Bake for 25-30 minutes or until the dough has risen, is pale golden and the custard has oozed out.
- While they are still warm, sprinkle each one with a little powdered sugar.
- Best consumed on the day of preparation.
