Rhubarb pudding muffins

Ingredients

  • ½ roasted rhubarb (see “goes well with this” below)
  • 140g light muscovado sugar
  • 75 ml vegetable oil
  • 1 egg
  • Peel 1 orange, finely grated
  • 284 ml carton sour cream
  • 300g self-raising flour
  • 8 tbsp ready-made thick Devon pudding from a box
  • golden powdered sugar for sprinkling

Preparation steps

  1. Prepare the roasted rhubarb, cool it and drain the juice (the juice mixes well with natural yogurt).
  2. Preheat the oven to 180°C/fan 160°C/gas 4.
  3. Line a 12-hole muffin tin with muffin paper cases.
  4. In a large bowl, stir together the sugar, oil, egg, orange zest and sour cream until there are no lumps and everything is completely combined.
  5. Gently mix in the flour and then fold in the rhubarb.
  6. Divide 3-4 of the batter evenly between the paper liners, filling them generously.
  7. Using a spoon, press into the center of each muffin to make a dip.
  8. Top each dip with a small dollop of chilled custard, then gently spread the rest of the muffin mixture over the custard.
  9. Bake for 25-30 minutes or until the dough has risen, is pale golden and the custard has oozed out.
  10. While they are still warm, sprinkle each one with a little powdered sugar.
  11. Best consumed on the day of preparation.
