  • 85g powdered sugar
  • 300g chopped rhubarb
  • 100 ml vodka
  • 100 ml rhubarb syrup (see above)
  • 1 length of rhubarb
  • 30 ml eggnog
  • 75 ml lemonade

Preparation steps

  1. For the rhubarb syrup, put the powdered sugar in a pot with 75 ml of water.
  2. Heat very carefully so that the sugar disappears but the water does not form bubbles.
  3. Add the chopped rhubarb, cover with a tight-fitting lid and increase the heat slightly so it begins to boil.
  4. Cover and simmer until the rhubarb is very tender but not falling apart, about 5 minutes.
  5. Turn off the heat and pour the contents of the pan into a fine sieve set over a bowl.
  6. Using a wooden spoon, gently squeeze the rhubarb to release all the juice but no pulp.
  7. Return to the pan and cook quickly for a few minutes until just syrupy.
  8. Pour into a jug – it should be about 125ml.
  9. Allow to cool completely. Any leftovers will keep in the fridge for up to 1 month.
  10. Chill 4 cocktail glasses with ice or in your freezer.
  11. Shake vodka and 100 ml rhubarb syrup together with ice until well mixed and cooled.
  12. Using a vegetable peeler, make small pieces of rhubarb and place them in ice water – this will make them curl.
  13. In a separate pitcher, stir together the eggnog and lemonade with a little ice to lighten it.
  14. Divide the vodka-rhubarb mixture between the glasses and strain through a small sieve to catch the ice.
  15. Carefully pour 25ml of your Advocaat mixture into each glass via an upturned spoon (the mixture should float on the surface of the vodka-syrup mixture).
  16. Drain the rhubarb shreds well and use them to garnish your cocktails.
