Ingredients

  • 450g rhubarb, cut into 4cm pieces
  • 100g golden powdered sugar
  • grated peel of 1 orange
  • 1 tbsp strawberry jam
  • 2 eggs, separated

Preparation steps

  1. Preheat the oven to 180°C/gas 4/fan 160°C.
  2. Place the rhubarb in an ovenproof dish.
  3. Sprinkle 50g sugar and the orange peel over the rhubarb.
  4. Mix rhubarb, sugar and orange peel.
  5. Cover the pan and bake in the oven for 35-40 minutes until tender.
  6. If desired, cook the rhubarb, sugar, and zest in the microwave at full power for 10 minutes, stirring halfway through, until just tender.
  7. Remove the rhubarb from the oven and let it cool slightly.
  8. Stir in the jam(s) and then the egg yolks.
  9. Divide the rhubarb mixture evenly between four 6-ounce ramekins.
  10. Place the ramekins on a baking sheet and bake in the oven for 10 minutes, until slightly thickened.
  11. While the rhubarb is cooking, beat the egg whites until stiff.
  12. Sprinkle half of the remaining sugar over the egg whites and whisk again.
  13. Gently fold in the remaining sugar.
  14. Layer the meringue on top of the rhubarb mixture so that it is completely covered.
  15. Swirl the top of the meringue for a decorative effect.
  16. Return the ramekins to the oven for 10 minutes, until the meringue is fluffy and golden brown.
  17. Serve the rhubarb and strawberry meringue pots immediately.
