- 400g pack of rhubarb, cleaned and cut into 2½ cm pieces
- 400g punnet strawberries, peeled and halved if large
- 85g granulated sugar
- 1 tbsp flour
- 250g can of mascarpone
- Zest and juice of 1 orange
- 1 tbsp powdered sugar
- 100g flour, plus some flour for dusting
- 50g ground almonds
- 85g golden powdered sugar
- 1 teaspoon Baking powder
- 50g butter
- 75 ml cream, plus 1 tbsp
- 1 tsp vanilla extract
- 25g almond flakes
Preheat the oven to 190°C/170°C fan/gas 5.
Place rhubarb and strawberries in a large bowl.
Sprinkle sugar and flour on top and stir gently to coat the fruit.
Place the coated fruit in a baking dish measuring approximately 30 x 20 cm.
For the topping, place flour, ground almonds, sugar, baking powder, butter and a pinch of salt in a food processor.

Press together any leftover dough and roll it out again if necessary.
Arrange the dough circles over the fruit in the baking dish, leaving 1-2cm between them.
Spread the circles with 1 tablespoon of cream.
Sprinkle the circles with flaked almonds.
Bake the cobbler in the oven for 40 minutes or until the topping is golden brown and the fruit is tender.
Mix together the mascarpone, orange peel, juice and powdered sugar.
Serve the mascarpone mixture alongside the cobbler.
