- 3 x 400g cans of lychees in syrup
- 50g powdered sugar

Leave out the egg

- Pour the syrup from two cans of lychee into a small saucepan.
- Add the sugar and dissolve over low heat.
- Bring to a boil for 1 minute.
- Pulse the drained lychees in a food processor until very finely chopped.
- Pour in the lime juice and syrup while the blade is still whirring – don’t worry if the mixture isn’t completely smooth at this point.
- Transfer to a 1-quart container and freeze until solid, at least 6 hours.
- Break up the frozen mixture and then return it to the bowl of the food processor.
- Add the egg whites and beat until thick, light and smooth.
- Add zest of 1 lime.
- Place back in the container and freeze again, ideally overnight.
- Serve in balls, sprinkling the remaining lychees with the remaining zest.
