Refreshing lychee-lime sorbet

  • 3 x 400g cans of lychees in syrup
  • 50g powdered sugar
  • protein
  • Zest of 2 limes, juice of 1


Leave out the egg
If you don’t want to add egg whites, the taste will remain the same, but the texture will be grainier.

Preparation steps

  1. Pour the syrup from two cans of lychee into a small saucepan.
  2. Add the sugar and dissolve over low heat.
  3. Bring to a boil for 1 minute.
  4. Pulse the drained lychees in a food processor until very finely chopped.
  5. Pour in the lime juice and syrup while the blade is still whirring – don’t worry if the mixture isn’t completely smooth at this point.
  6. Transfer to a 1-quart container and freeze until solid, at least 6 hours.
  7. Break up the frozen mixture and then return it to the bowl of the food processor.
  8. Add the egg whites and beat until thick, light and smooth.
  9. Add zest of 1 lime.
  10. Place back in the container and freeze again, ideally overnight.
  11. Serve in balls, sprinkling the remaining lychees with the remaining zest.
