  • 400 g strawberries, cleaned and peeled
  • 85g powdered sugar
  • Juice ½ lemon
  • 2 gelatin sheets
  • 50 ml double cream
  • 1-2 tsp powdered sugar
  • a handful of blueberries for serving

Preparation steps

  1. Put the strawberries, powdered sugar and lemon juice in a saucepan with 100 ml of water.
  2. Bring the mixture to a boil, then remove from heat and skim off any foam that rises to the surface.
  3. Pour the mixture into a large measuring cup by pressing it through a fine sieve.
  4. Fill the jug with boiling water to make 300ml of strawberry juice.
  5. In a separate bowl, cover the gelatin with cold water and let it soak for 5 minutes until softened.
  6. Squeeze excess liquid from the gelatin and add it to the hot strawberry juice, stirring until dissolved.
  7. Pour the jelly mixture into serving glasses and refrigerate for at least 3 hours to set.
  8. Just before serving, beat the cream with powdered sugar until soft peaks form.
  9. Spread the whipped cream over the set jelly and sprinkle with blueberries.
