Ingredients

  • some candy to decorate, we used jelly hearts from a candy store (optional)
  • 250g butter, plus some butter for greasing
  • 200g dark chocolate, broken into pieces
  • 500g plain flour
  • 500g golden powdered sugar
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 200g natural yogurt
  • 400 g cooked beetroot in natural juices (no vinegar)
  • 4 tbsp or 2 x 28ml bottle red food coloring (optional – natural liquid coloring won’t work; we used Scarlett Langdale)
  • 200 g full-fat soft cheese, at room temperature
  • 250 g butter, soft
  • 400g powdered sugar, sifted
  • 2 tsp vanilla extract

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Prepare the first batch of sponge cake dough by greasing and lining 2 x 20cm round tins.
  3. Carefully melt half of the butter and chocolate in a saucepan.
  4. Mix half the flour, sugar, cocoa, bicarb and ¼ teaspoon salt in a large mixing bowl.
  5. Mix one egg and half of the yogurt and beetroot in a food processor or blender until fairly smooth.
  6. Put the kettle on.
  7. Add the beetroot mixture to the dry ingredients along with the melted chocolate mixture and 150 ml boiling water and stir.
  8. If using, stir in half the food coloring and divide the mixture between the cans.
  9. Bake for 25 minutes, until a skewer inserted into the center comes out clean.
  10. Let the cakes cool completely on a wire rack.
  11. Repeat steps 1 and 2 to make two more sponge cakes. If you’re lucky enough to have 4 x 20 cm sandwich pans, you can also bake a large batch at once.
  12. To make the glaze, briefly mix the soft cheese and butter, then stir in the powdered sugar and vanilla.
  13. Use a small amount to assemble the cooled cakes, then swirl the rest over the entire cakes and decorate with candy as desired.
  14. Place the cake in a cool place (not the refrigerator) to firm up a little before serving.
