  • 1 small red cabbage (approx. 600 g), cored and cut into thin slices
  • 5 tbsp balsamic vinegar
  • 3 tbsp soft brown sugar
  • 1 tsp spice mix
  • 2 tbsp currant jelly
  • 4 venison steaks (about 175 g each)
  • 175g blackberries
  • 2 tbsp crème de mure or crème de cassis (optional)
  • 1 tbsp oil
  • Mashed potatoes to serve

Preparation steps

  1. Melt butter in a large pot,

  3. 10 minutes until really soft. add the
  4. Cabbage, vinegar, sugar, spice mixture
  5. and half of the jelly together with 100 ml of water,
  6. then season. Bring to the boil, then stir
  7. cover with a lid. Let cook for 40 minutes
  8. a medium to low heat. Meanwhile remove
  9. to get the venison out of the fridge

  11. Add blackberries and crème de
  12. Add mure or crème de cassis, if using
  13. Cabbage mixture. continue cooking,
  14. Simmer uncovered for 5-10 minutes until the liquid has risen

  17. Heat a frying pan until hot. Rub the
  18. Fry the venison steaks with the oil, then season.
  19. Cook in the hot pan for 4-5 minutes
  20. per side, depending on thickness,
  21. for medium-rare. In the last 1 minute of

  23. Toss and spoon over the steaks
  24. melts. Remove the steaks from the pan
  25. toss and let rest. Serve the cabbage
  26. and venison with mashed potatoes.
