Ingredients

  • 150g raspberries
  • 200 g light brown soft sugar, plus 1 tsp
  • 225g unsalted butter, plus a little extra for the tin
  • 100g powdered sugar
  • 200g plain flour
  • ½ tsp baking powder
  • 3 eggs
  • 1 tsp vanilla extract
  • 125g dark chocolate, chopped into pieces
  • 125g white chocolate, chopped into pieces

Preparation steps

  1. Place most of the raspberries in a saucepan along with 1 teaspoon brown sugar and 2 teaspoons water (reserve a handful).
  2. Cook over medium heat until the raspberries have broken down and become jammy.
  3. Remove from heat and set aside to cool while you prepare the dough.
  4. Melt the butter in a second skillet over low-medium heat.
  5. Add both sugars and cook until the mixture bubbles and the sugar has dissolved.
  6. Remove from heat and let cool for 10 minutes.
  7. Meanwhile, mix the flour, baking powder and a good pinch of salt in a large bowl.
  8. Butter a 20 x 30 cm tin and line it with baking paper. Preheat the oven to 180°C/160°C fan/gas 4.
  9. Pour the wet ingredients into the dry, add the eggs and vanilla and mix well until there are no pockets of flour left.
  10. Sprinkle the dark and white chocolate pieces on top and fold in.
  11. Scrape the mixture into the prepared pan and smooth the surface with a spatula.
  12. Place a teaspoon of raspberry compote on top and then use a skewer to gently swirl it through the dough to create a marbled effect.
  13. Scatter the reserved raspberries on top.
  14. Bake for 40-45 minutes until the dough is set and has a slightly sticky center.
  15. Allow to cool completely in the tin, then cut into squares to serve.
  16. Store in an airtight container for up to three days.
