- 150g raspberries
- 200 g light brown soft sugar, plus 1 tsp
- 225g unsalted butter, plus a little extra for the tin
- 100g powdered sugar
- 200g plain flour
- ½ tsp baking powder
- 3 eggs
- 1 tsp vanilla extract
- 125g dark chocolate, chopped into pieces
- 125g white chocolate, chopped into pieces
- Place most of the raspberries in a saucepan along with 1 teaspoon brown sugar and 2 teaspoons water (reserve a handful).
- Cook over medium heat until the raspberries have broken down and become jammy.
- Remove from heat and set aside to cool while you prepare the dough.
