Ingredients
- 6 egg yolks
- 175g powdered sugar
- 300 ml pot of double cream
- 2 x 250g cans of mascarpone
- 1 tbsp vanilla extract
- 150 ml Marsala or sweet wine
- 24 sponge fingers
- 350g raspberries
- Powdered sugar, for dusting
Preparation steps

- Place a heatproof bowl with the egg yolks and sugar over a pan of simmering water and stir until the mixture is light and creamy and has doubled in volume. Remove from heat and stir until cool, 1 minute more.
- In another bowl, stir together the cream, mascarpone and vanilla until a thick, creamy mixture forms. Fold this mixture into the creamy egg yolk or whisk very gently.
- Dip half of the ladyfingers in the marsala and place them in the bottom of a serving bowl. Pour half of the creamy mixture over the top and top with most of the raspberries.
- Repeat the layers and finally spread the remaining raspberries on top. Cover and chill for at least 2 hours.
- Just before serving, dust the tiramisu with powdered sugar in large bowls.
