Ingredients

  • 200g powdered sugar
  • 200 g butter, soft
  • 4 eggs
  • 1 tsp vanilla extract

  • 1 teaspoon Baking powder
  • 3 tbsp milk
  • 200g punnet of raspberries
  • 140g marshmallows

Preparation steps

  1. Grease a 23cm deep, loose-bottomed cake tin and cut a circle of baking paper to fit in the base.
  2. Cut a thick strip of parchment to fit around the edge of the can.
  3. Preheat the oven to 190°C/fan 170°C/gas 5.
  4. Place sugar and butter in a large mixing bowl.
  5. Mix with an electric whisk (or a wooden spoon if you have more time and energy) until the mixture is creamy and soft.
  6. Crack the eggs one at a time, beating well after each addition.
  7. Stir in the vanilla extract, then the flour and baking powder, then stir in the milk to loosen the mixture.
  8. Gently stir in half of the raspberries, being careful not to stir too vigorously or they will fall apart.
  9. Bake the cake for 25-30 minutes until almost cooked through.
  10. Then carefully remove it from the oven.
  11. Scatter the marshmallows all over the cake, leaving a 2cm border around the edge of the tin as the marshmallows will expand as they bake. Then insert the raspberries into the gaps.
  12. Return to the oven for another 10 minutes, until the cake is fully baked and the marshmallows are lightly browned and gooey.
  13. Let it rest for 5 minutes, then remove from the tin, cut into pieces and eat.
