Ingredients
- 175g plain flour
- 50g ground rice
- 85g golden powdered sugar
- 140 g cold butter, diced
- 1 tablespoon milk
- 1 tsp cinnamon
- ½ tsp ground cloves
- 8 tbsp raspberry jam
- 2 tsp powdered sugar
Preparation steps
- Preheat oven to 200°C/180°C fan/gas 6.
- Line a square, shallow baking tin with a diameter of 21 or 22 cm with baking paper.
- Put the flour, ground rice and sugar in a bowl with the butter and stir until fine crumbs form.
- Stir in the milk with a cutlery knife.
- Stir in cinnamon and cloves.
- Pour three quarters of it into the mold and press down evenly.
- Bake for 15-20 minutes until it looks golden brown and crispy.
- Loosen the jam a little in a bowl and spread it over the bottom.
- Crumble the remaining slice mixture over the top and bake for another 5-10 minutes, until the topping is golden brown.
- Sprinkle with 2 teaspoons of powdered sugar.
- Allow to cool in the tin and then cut into squares.
