Ingredients

  • 100 g oatmeal porridge (not instant)
  • 25g coconut cream, chopped
  • 200g frozen raspberries
  • 125 g coconut yogurt (we used COYO)
  • a few mint leaves for serving (optional)

Porridge can be easily reheated the next day in bowls in the microwave or in a pan on the stove with a splash of milk or water.

Preparation steps

  1. Place the oats and coconut cream in a large bowl.
  2. Pour in 800 ml of cold water.
  3. Cover the bowl and let it soak overnight.
  4. The next day, pour the contents of the bowl into a pot.
  5. Cook over medium heat, stirring frequently, until the oats are cooked through, 5-10 minutes.
  6. Add the raspberries to the pot.
  7. Also add the yogurt and let it thaw and melt into the oatmeal.
  8. Remove the pot from the heat and reserve half for the next day.
  9. Divide the remaining mixture into bowls.
  10. Optionally top each portion with mint leaves.
