Ingredients

  • 400g butter, softened, plus a little butter for greasing
  • 400g soft light brown sugar
  • 5 large eggs
  • 400g self-raising flour
  • 2 tsp vanilla extract
  • 2 Table spoons of milk
  • 200g raspberries
  • 397g canned caramel (we used clove)
  • 300 g cup full-fat cream cheese
  • 140 g butter, soft
  • 300g golden powdered sugar
  • 100g raspberries
  • pink and caramel colored food coloring pastes

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Grease the bottom and sides of 2 x 20 cm deep cake tins and line them with baking paper.
  3. In a large bowl, beat butter, sugar, and 1/4 teaspoon salt with an electric mixer until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. If the mixture looks like it’s about to burst, add a spoonful of flour.
  6. Add the remaining flour and stir in the vanilla and milk.
  7. Gently fold in the raspberries, making sure not to chop them up too much.
  8. Divide the mixture between the tins and bake for 50-55 minutes or until a skewer inserted into the center comes out clean.
  9. Cool cakes in pan for 20 minutes, then turn out onto wire racks to cool completely.
  10. For the glaze, place 1 tablespoon of caramel, cream cheese, butter and powdered sugar in a large bowl and mix with an electric hand mixer until smooth.
  11. Using a large serrated knife, cut the cakes down the middle.
  12. Glue a cake base with some cream cheese icing onto a board or cake stand.
  13. Layer the remaining cake layers on top and fill with caramel and raspberries between each layer.
  14. Finish with a flat layer of caramel.
  15. Using a spatula, cover the cake thinly with the icing.
  16. Chill the cake for 30 minutes.
  17. Divide the remaining frosting between two bowls, about two-thirds in one bowl and the remaining third in the other.
  18. Color the smaller portion of frosting pink and the other portion a cookie-caramel color with food coloring.
  19. Remove the cake from the refrigerator and spread the caramel-colored icing on top.
  20. Spread the icing over the top of the cake and spread it down the sides, stopping about halfway up.
  21. Cover the bottom half of the cake with the pink icing.
  22. Using a clean spatula, gently brush the glaze upwards and mix the colors.
  23. Continue this around the cake, wiping with the spatula between each coat.
  24. If necessary, run the spatula around the edges of the cake to smooth the surface.
  25. Best consumed within a day of preparation, but can be stored in the refrigerator for up to 3 days, simply bring to room temperature before eating.
