Ingredients

  • 140g ground almonds
  • 140 g butter, soft
  • 140g golden powdered sugar
  • 140g self-raising flour
  • 2 eggs
  • 1 tsp vanilla extract

  • 2 tbsp almond flakes

  2. Spread and grease a 20cm deep loose-bottomed cake tin.
  3. Pulse the ground almonds, butter, sugar, flour, eggs and vanilla extract in a food processor until well blended.
  4. Spread half of the cake mixture on the cake pan and smooth it out.
  5. Scatter the raspberries over the cake mixture.
  6. Divide the remaining cake mixture over the raspberries.
  7. Roughly spread the remaining cake mixture on top, perhaps this is easier with your fingers.
  8. Scatter flaked almonds over the cake.
  9. Bake for 50 minutes until the cake turns golden brown.
  10. Let the cake cool.
  11. Take the cake out of the tin.
  12. To serve, dust the cake with powdered sugar.
