Ingredients

  • 200g plain flour
  • 200g porridge
  • 250g pack of butter, room temperature, cut into small pieces
  • 175g light muscovado sugar
  • finely grated zest of 1 lemon
  • 100g pack of pine nuts
  • 2 baskets of raspberries (total weight 250g/9oz)

Preparation steps

  1. Preheat the oven to 170 °C fan/190 °C top/bottom heat/Gas 5.
  2. Butter a 23cm diameter shallow square tin.
  3. Place flour, oats and butter in a mixing bowl.
  4. Using your fingers, work the mixture into coarse crumbs.
  5. Mix in the sugar, lemon zest and three quarters of the pine nuts with your hands.
  6. Squeeze the mixture well to form large, sticky clumps.
  7. Place about two-thirds of the oat mixture in the bottom of the can.
  8. Spread it out and press it very lightly – don’t press it too hard.
  9. Scatter the raspberries on top.
  10. Sprinkle the rest of the oat mixture over the raspberries.
  11. Scatter the remaining pine nuts on top.
  12. Press everything down lightly.
  13. Bake for 35-40 minutes until the top is light golden.
  14. While still warm, cut into 12 bars with a sharp knife.
  15. Allow to cool in the tin before removing.
  16. Lasts 2-3 days.
