  • 175g soft butter
  • 175g golden powdered sugar
  • 3 eggs
  • 140g self-raising flour
  • 85g ground almonds
  • 140g amaretti biscuits, roughly broken
  • 250g punnet of raspberries
  • Powdered sugar, for dusting
  • Single cream in a box of 142 ml

Preparation steps

  1. Preheat the oven to fan 140°C/fan 160°C/gas 3.
  2. Line a loose-bottomed round cake tin with a diameter of 20 cm and butter.
  3. Place butter, powdered sugar, eggs, flour and ground almonds in a large bowl.
  4. Beat with an electric mixer until all ingredients are well mixed.
  5. Spread half of the cake mixture in the baking paper-lined pan.
  6. Spread half of the amaretti cookies on top, then top with a third of the raspberries.
  7. Press very lightly into the cake mixture.
  8. Spoon tablespoons of the remaining cake mix over the amaretti and raspberries, spreading evenly.
  9. Scatter the remaining amaretti and half of the remaining raspberries on top.
  10. Bake for 55-60 minutes, until a skewer inserted into the center comes out clean.
  11. Let cool in the tin for 15 minutes.
  12. Run a knife along the edge and fall.
  13. It will keep in a covered container in the refrigerator for up to 2 days.
  14. To serve, remove from the refrigerator an hour before serving and dust lightly with powdered sugar before serving.
  15. Serve with the remaining raspberries and some cream.
