  • 140g carrot, grated
  • 2 tsp black cumin seeds
  • 100 g parsnips, peeled into fine strips with a potato peeler
  • 2 tbsp desiccated coconut
  • small package of cilantro, stems only, finely chopped (use the leaves at the bottom)
  • 140g beetroot, half grated and half cut into fine sticks
  • 2 tsp grated ginger
  • 1l sunflower oil, for frying
  • Lemon wedges for serving
  • Lime wedges for serving
  • 4 tbsp balti paste
  • 250 g flour (or plain flour)
  • 1 teaspoon Baking powder
  • 1 tsp cumin seeds
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 teaspoon garam masala
  • ¼ tsp hot chili powder
  • 2 medium onions, thinly sliced
  • 350g coconut yogurt (I used Coyo)
  • Small pack of coriander, leaves picked
  • Zest and juice of 2 limes

Preparation steps

  1. To make the dough, stir the Balti paste into 250 ml of cold water.
  2. Mix flour, baking powder and spices in a mixing bowl.
  3. Make a well in the middle of the dry ingredients.
  4. Pour the Balti water into the well with the dry ingredients.
  5. Mix gradually until a smooth dough forms.
  6. Stir in the chopped onions.
  7. Divide the dough into three separate bowls.
  8. Stir in the carrot and black cumin seeds in a bowl.
  9. In another bowl, stir in parsnips, coconut and chopped coriander stalks.
  10. In the third bowl, stir in the beetroot and ginger.
  11. To make the coriander cream, mix half of the coconut yogurt with the coriander leaves and lime juice until well blended and green.
  12. Stir in the lime zest and remaining yogurt and refrigerate until ready to serve.
  13. Heat oil in a deep pan or non-stick wok to 180°C or until a piece of bread browns in 20 seconds.
  14. Add a spoonful of each mixture to the hot oil, starting with the parsnip and last with the beetroot.
  15. Cook for a few minutes, turning occasionally, until evenly browned and crispy, about 4 minutes.
  16. Remove the bhajis from the oil with a slotted spoon and place them on paper towels.
  17. Sprinkle with a little salt and keep warm in the oven on low heat while preparing the remaining bhajis.
  18. Serve the hot bhajis with the coriander cream.
  19. Have lemon and lime wedges ready for squeezing.
