Good to know

Commonly used in savory Indian dishes, chickpea flour (also called besan or chickpea flour) is a fine yellow gluten-free flour made from ground chickpeas. Find it on the grocery aisle at the supermarket or at your local health food store.

Preparation steps

  1. To make the dough, stir the Balti paste into 250 ml of cold water.
  2. Mix flour, baking powder and spices in a mixing bowl.
  3. Make a well in the middle of the dry ingredients.
  4. Pour the Balti water into the well with the dry ingredients.
  5. Mix gradually until a smooth dough forms.

  8. Stir in the carrot and black cumin seeds in a bowl.
  9. In another bowl, stir in parsnips, coconut and chopped coriander stalks.
  10. In the third bowl, stir in the beetroot and ginger.
  11. To make the coriander cream, mix half of the coconut yogurt with the coriander leaves and lime juice until well blended and green.
  12. Stir in the lime zest and remaining yogurt and refrigerate until ready to serve.
  13. Heat oil in a deep pan or non-stick wok to 180°C or until a piece of bread browns in 20 seconds.
  14. Add a spoonful of each mixture to the hot oil, starting with the parsnip and last with the beetroot.
  15. Cook for a few minutes, turning occasionally, until evenly browned and crispy, about 4 minutes.
  16. Remove the bhajis from the oil with a slotted spoon and place them on paper towels.
  17. Sprinkle with a little salt and keep warm in the oven on low heat while preparing the remaining bhajis.

Health Benefits of Rainbow Bhajis with Coriander Cream

When it comes to Indian cuisine, the bright colors, rich flavors and aromatic spices are always a treat for the senses. Rainbow bhajis with coriander cream are no exception. Not only are they incredibly delicious, but they also offer several health benefits. Let’s take a closer look at the key ingredients and their nutritional value.

carrot

Grated carrots are a great addition to the bhajis, not only because of their sweet taste but also because of their numerous health benefits. Carrots are rich in beta-carotene, which is converted into vitamin A in the body. Vitamin A is important for good eyesight, a strong immune system and healthy skin.

parsnip

Parsnips, peeled into shavings, give the bhajis a unique texture and taste. This root vegetable is a good source of fiber, which aids digestion and promotes a healthy gut. They are also rich in potassium, a mineral that plays an important role in maintaining normal blood pressure.

Beetroot

The beautiful deep red color of the grated beetroot in these bhajis is not only visually appealing but also indicates its nutritional value. Beetroot is rich in antioxidants and dietary nitrates, which are known to improve exercise performance, lower blood pressure and support heart health.

Ginger

The grated ginger adds a delicious spice to the bhajis while providing several health benefits. Ginger has long been used for its anti-inflammatory and digestive properties. It can also help relieve nausea and reduce muscle soreness.

coriander

Coriander is a versatile herb that adds freshness to the dish. Coriander leaves used as a garnish are a good source of vitamin C, vitamin K and antioxidants. They are traditionally used for their anti-inflammatory and digestive properties.

grams of flour

The bhajis are made from chickpea flour, also called besan or chickpea flour. Chickpea flour is gluten-free and high in protein and fiber, making it a nutritious alternative to regular flour. It is also rich in several essential minerals such as iron, magnesium and zinc.

Coconut yogurt

The coriander cream is made with coconut yogurt, a dairy-free option full of healthy fats. Coconut yogurt is rich in medium-chain triglycerides (MCTs), which are easily digestible and can provide a quick source of energy. It also contains probiotics that promote a healthy gut and support immune function.

With all these nutritious ingredients, rainbow bhajis with coriander cream are not only a delicious and colorful dish but also a healthy addition to your diet. Try incorporating them into your meals for a burst of flavor and health benefits!
