Quince crumble tart

Ingredients

  • 1 kg quinces, cored and roughly chopped
  • 175g powdered sugar

Preparation steps

  1. To make the quince puree, place the quinces in a large pot with 350 ml of water.

  2. Cover with a lid and simmer for 1 hour until the quinces change color and become mushy.

  3. Remove from heat and allow to cool slightly, then blend with a hand blender until smooth.

  4. Strain the quince puree through a sieve into a clean pan and stir in the sugar, lemon zest and juice, and cinnamon.

  5. Cook the puree until reduced by a third, then mix the cornstarch with a little water and stir into the puree until it is thick.

  6. Take it from the stove and let it cool off.

  7. Preheat the oven to 160°C/140°C fan/gas 3.

  8. To make the dough, rub the butter into the flour and almonds.

  9. Add the sugar and zest, then the egg and yolk.

  10. Put everything together, wrap in cling film and chill for 15 minutes.

  11. Roll out the dough on a lightly floured surface to line a 9-inch tart pan.

  12. Pour into the tin, trim the edges of the dough if necessary and chill for 15 minutes.

  13. Line the dough with baking paper and baking beans and blind bake for 20 minutes.

  14. Remove beans and paper and cook for another 15 minutes until the bottom is biscuit-like.

  15. Remove from the oven and let cool slightly.

  16. Increase the oven to 180°C/160°C fan/gas 4.

  17. In the meantime, for the streusel topping, mix the flour, oat flakes and sugar with a pinch of salt.

  18. Rub in the butter until an uneven, crumbly mixture forms.

  19. To assemble the tart, pour the quince puree into the tart base so that it comes just below the edge.

  20. Sprinkle the streusel on top and cook for 25-30 minutes or until the streusel is golden brown and the quinces are bubbling around the edges.

  21. Serve warm with cream or vanilla sauce if desired.
