  • 100g can of tuna in oil
  • 400 g canned cannellini beans (borlotti or butter beans also work well)
  • 1-2 red onions, finely chopped
  • Zest and squeeze 1 lemon
  • large handful of parsley

Preparation steps

  1. Heat the cooked penne in the microwave according to the package instructions.
  2. Place the cooked penne in a bowl.
  3. Mix in the remaining ingredients.
  4. If using refrigerated leftover pasta, simply mix everything together.
  5. Stores in the fridge for up to 3 days.
