Quick roast lamb

Ingredients

  • 1 tablespoon oil, plus a little more for the lamb

  • 100 ml red wine
  • 100 ml lamb stock (one cube is enough)
  • red currant jam
  • 4 lamb chops or schnitzels
  • green beans or other vegetables for serving

Preparation steps

  1. Preheat the oven to 220°C/fan 200°C/gas 7.
  2. Place potatoes and carrots on a baking sheet.
  3. Mix potatoes and carrots with oil and rosemary.

  5. Roast the potatoes and carrots on the top shelf of the oven for 15 minutes.
  6. Check that the vegetables are golden brown and almost tender.
  7. While the vegetables are roasting, prepare the sauce.
  8. Place the wine and broth in a small saucepan.
  9. Bring the wine and stock to the boil until reduced by about two-thirds.
  10. Stir in the currant jelly.
  11. Season the sauce with salt and pepper.
  12. Keep the sauce warm.
  13. Rub the lamb with a little oil.
  14. Season the lamb with salt and pepper.
  15. Place the lamb between the roasted vegetables.
  16. Place the tray back in the oven for 8-10 minutes.
  17. Turn the lamb halfway through the cooking time.
  18. Serve the lamb with the currant sauce and some green vegetables.
