- 200g lean lamb steak, diced

- 2 tbsp mild curry paste
- 225 g canned chopped tomatoes
- 160 ml can of coconut cream
- 100g bag of baby spinach
- ½ 20g pack of coriander, chopped (approx. 1 tbsp)
- Dry-fry the cumin seeds in a wok for about 20 seconds
- Add half of the oil to the wok
- Stir-fry the lamb until browned but not completely cooked through, about 1 minute
- Place the lamb on a plate
- Add the rest of the oil to the wok
- Stir-fry the peppers and chili for a few minutes until soft
- Mix the curry paste, tomatoes and coconut cream with half a can of water
- Simmer the mixture until zesty, about 5 minutes
- Add lamb, spinach and coriander
- Stir until the spinach has wilted
- Serve the curry with basmati rice
