- 1 Chinese cabbage
- 3 cloves of garlic, crushed
- 2½ cm piece of ginger, grated
- 2 tbsp fish sauce (optional)
- 2 tablespoons Sriracha chili sauce or chili paste (see below)
- 1 tbsp golden powdered sugar
- 3 tbsp rice vinegar
- 8 radishes, coarsely grated
- 2 carrots, cut into sticks or coarsely grated
- 4 spring onions, finely chopped
What is Sriracha chili sauce?
Named after the coastal town of Si Racha in Thailand, where it originated, this spicy, spicy sauce is made from red chili peppers, garlic, vinegar, salt, and sugar. It is often used as a dip or condiment in Thai and Vietnamese cuisine. Find it in Asian grocery stores, larger Marks & Spencer and Tesco stores or online.
- Cut the cabbage into 2.5 cm thick strips.
- Place in a bowl, mix with 1 tablespoon of sea salt and let rest for 1 hour.
- Meanwhile, prepare the kimchi paste by combining garlic, ginger, fish sauce (if using), chili sauce, sugar and rice vinegar in a small bowl.
- Rinse the cabbage under cold running water, drain and dry thoroughly.
- Place in a large bowl and mix the paste together with the radishes, carrots and scallions.
- Serve immediately or pour into a large jar, seal and let ferment overnight at room temperature, then allow to cool.
