  • 300g cherry tomatoes
  • Drizzle olive oil
  • 50g Parmesan (or vegetarian alternative), grated
  • 2 eggs
  • 284 ml pot of double cream
  • a handful of basil leaves, chopped, plus a few small ones left over for scattering
  • 280g flour, plus some flour for dusting
  • 140g cold butter, cut into pieces

Preparation steps

  1. Make the dough by combining the flour and butter in a bowl and rubbing with your fingertips until a crumbly consistency is formed.
  2. Add 8 tablespoons cold water and mix with your hands until well combined.
  3. Roll out the dough on a lightly floured surface into a round shape, about 5cm larger than a 25cm baking tin.
  4. Using a rolling pin, lift the dough and place it over the tart pan, leaving an overhang of dough on the sides.
  5. Using a small ball of leftover dough, press the dough into the corners of the pan.
  6. Chill the tart in the refrigerator or freezer for 20 minutes.
  7. Preheat the oven to 200°C/fan 180°C/gas 6.
  8. In a small roasting pan, drizzle the tomatoes with olive oil and season with salt and pepper.
  9. Place the tomatoes on a low rack in the oven.
  10. Lightly prick the bottom of the cake with a fork.
  11. Line the cake pan with a large circle of baking paper or foil.
  12. Fill the tart base with baking beans.
  13. Bake the tart blind for 20 minutes.
  14. Remove the paper and beans, then continue baking for 5-10 minutes until the dough is biscuit brown.
  15. Remove the tart base and tomatoes from the oven.
  16. While the tart is cooking, beat the eggs in a large bowl.
  17. Gradually add the cream to the eggs.
  18. Stir in the basil and season with salt and pepper.
  19. When the tart base is ready, sprinkle half of the cheese over the pastry base.
  20. Scatter the roasted tomatoes over the cheese.
  21. Pour the cream mixture over the tomatoes.
  22. Finally sprinkle the remaining cheese on top.
  23. Bake the tart for 20-25 minutes until set and golden brown.
  24. Let the tart cool in the tin.
  25. Trim the edges of the pastry and remove the tart from the tin.
  26. Sprinkle the remaining basil on top.
  27. Serve the quiche in slices.
