Ingredients
- some flour for dusting
- 500g pack of puff pastry
- 2 tbsp onion chutneys
- 2 tbsp harissa
- ½ butternut squash, peeled, seeded and cut into very thin slices
- 200g pack of feta cheese, crumbled
- 1 tbsp pine nuts
- small bunch of mint, leaves picked
- large handful of arugula leaves
Preparation steps
- Preheat the oven to 180°C/160°C fan/gas 4.
- Place a large baking sheet on the middle rack to heat.
- Roll out the dough on a floured work surface into a 30 cm square.
- Trim the edges, lightly score a 1cm border around the edge of the cake and prick the center all over with a fork.
- Transfer the dough base to a sheet of baking paper.
- Mix the chutney and harissa together and spread in the middle of the dough.
- Spread the pumpkin on top in a single layer and season.
- Place the tart on the hot baking tray and bake for 30 minutes.
- Remove the tart, sprinkle the feta and pine nuts on top and bake for another 20 minutes.
- To serve, sprinkle mint and arugula on top.
