Pull-apart pork with honey chipotle

  • 1.2kg sliced ​​pork shoulder (weight after rind is cut off – ask your butcher to do this)
  • 75 g ketchup, plus 1 tbsp

  • 1 tbsp red wine vinegar

Preparation steps

  1. Up to two days in advance (and at least 2 hours in advance), mix 75 g of ketchup with 2 tablespoons of chipotle, 2 tablespoons of honey and the vinegar.
  2. Rub the mixture all over the pork and let it marinate in a food bag (or bowl) in the refrigerator, turning occasionally.
  3. Preheat the oven to 160°C/140°C fan/gas 3.
  4. Place the pork in a well-fitting roasting pan and baste with excess marinade and 100ml water.
  5. Cover the pork with foil, making sure it is tightly sealed but the foil is not touching it.
  6. Bake the pork for 4 hours.
  7. Set the oven to 200°C/180°C fan/gas mark 6 (or cool the pork if preparing it).
  8. Remove the foil and place the pork back in the oven for 30 minutes, until crispy and gooey on the outside.
  9. Remove the pork from the can and shred the meat with two forks.
  10. Mix 1 tablespoon ketchup with the remaining chipotle and honey.
  11. Stir the mixture through the shredded meat with some spices.
  12. Serve and enjoy.
