  • 140g butter, chilled and diced
  • 250 g flour
  • Zest 1 lemon
  • 100g golden powdered sugar
  • 1 egg, beaten
  • 1 tbsp whole milk
  • 250 ml double cream
  • 250 ml milk
  • 1 vanilla bean, split
  • 1 strip of lemon peel
  • whole nutmeg
  • 8 egg yolks
  • 100g golden powdered sugar

Preparation steps

  1. Make the dough by rubbing the butter into the flour with lemon zest and salt until it resembles breadcrumbs.
  2. Add sugar, egg and milk to the mixture and form a dough. This can be prepared 2 days in advance.
  3. Roll out the dough on a floured work surface and use it to line a 20 cm tart tin, leaving 2 cm hanging over the edge. Chill for 30 minutes.
  4. Preheat the oven to 180°C/160°C fan/gas 4.
  5. Line the tart base with baking beans and blind bake for 20 minutes.
  6. Remove the beans and continue cooking for another 20 minutes until the bottom is biscuit-like.
  7. Reduce the oven temperature to 140°C/120°C fan/gas 1.
  8. Bring the cream, milk, vanilla pod, lemon peel and a small grated nutmeg to the boil in a saucepan.
  9. In a separate bowl, beat the egg yolks with the sugar until light and then pour the hot milk and cream mixture over it, stirring constantly. Strain the custard into a jug and skim off any foam.
  10. Carefully pour the vanilla sauce into the tart base and grate some more nutmeg over it.
  11. Bake for 40 minutes or until the pudding is just set and jiggles slightly in the center.
  12. Take the tart out of the oven and cut off the edges of the dough. Allow to cool completely before serving in slices.
  13. Optionally sprinkle with grated nutmeg before serving.
