Ingredients

  • 500g strong white bread flour
  • 7 g bag of fast-acting dry yeast
  • 25g dark brown muscovado sugar
  • 50g unsalted butter, melted
  • Flour for dusting
  • Oil, for greasing
  • 3 tbsp baking soda, baked (see below)
  • 1 large egg, lightly beaten, for glazing
  • Sea salt flakes for serving

Pour a packet of baking soda onto a foil-lined baking tray and bake at 120°C/100°C fan/gas 1/2 for 1 hour. Transfer to an airtight container, label and use the next time you make pretzels. Has a shelf life of three months.

Follow the recipe given, but roll out the dough to 50cm instead of 60cm in step 3. The pretzels rise in the oven, close the classic pretzel holes and you get beautifully fluffy rolls.

  1. Place flour, yeast, sugar and 1 teaspoon salt in a large bowl and mix.
  2. In a large jug, mix 300 ml lukewarm water and the butter.
  3. Make a well in the flour mixture, pour in the water and mix everything into a coarse dough.
  4. Transfer to a floured work surface and knead for 10-15 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with oiled cling film and let it rest for about 1 hour until it has doubled in size.
  6. Once the dough has risen, remove the air bubbles from the dough and divide it into 8 equal pieces.
  7. Using your hands, roll each piece into a long rope about 2 feet long.
  8. To form pretzels, place the rope in a U shape with the curve facing you.
  9. Take the two ends and cross them.
  10. Take the ends, lift them back, and press them into the curve of the U-shape.
  11. Repeat with the remaining dough.
  12. Preheat oven to 200°C/180°C fan/gas 6.
  13. Carefully place the pretzels on a baking tray lined with baking paper and lightly greased with oil.
  14. Cover lightly with oiled cling film.
  15. Let rest until dough has risen (not completely risen like bread dough), about 20 minutes.
  16. Fill a medium pot with water, bring to a boil, add the baked baking soda, then reduce the heat to low.
  17. One at a time, carefully lift the pretzels into the pan and cook for 20 seconds on each side.
  18. The pretzels rise to the surface; Turn over with a slotted spoon.
  19. Use the spoon to carefully lift the pretzels out of the pan and place them back on the baking sheet.
  20. Once everything is cooked in the water, brush lightly with the egg and sprinkle with sea salt flakes.
  21. Bake in the oven for 20-25 minutes or until a rich, dark brown color.
  22. Let cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  23. Best served on the day of preparation, but can be frozen for up to a month.
