  4. Remove the potato from the pan, add the onion and fry until soft and golden brown.
  5. Now add the red pepper and cook until soft.
  6. Return the potatoes to the pan.
  7. In a bowl, whisk the eggs with plenty of spices and then pour over the potatoes, peppers and onions.
  8. Continue pushing the egg mixture back and forth in the pan to make room for the uncooked egg.
  9. When the egg has set, add the grated cheese on top and place the pan under a hot grill for a few minutes until the cheese is golden brown and bubbling.
  10. Cut into wedges and serve (salad goes well with it, baked beans even better).
