  • 3 medium potatoes, quartered
  • 100g flour, plus some flour for dusting
  • ½ tsp baking powder
  • 150g pack of full-fat soft cheese
  • 200g pack of smoked salmon
  • half a small red onion, thinly sliced
  • 1 tbsp capers, drained
  • Zest 1 lemon

  1. Make the potato cakes:

  • Weigh out 250 g of the mash and place it in a bowl.

  • Heat a large nonstick skillet over medium-high heat.
  • Dry fry the potato pancakes for about 3-5 minutes on each side until golden brown and cooked through.
  • You may need to do this in batches.
  • Stir a little water into the soft cheese until it is spoonable.
  • Divide the potato cakes onto plates.
  • Top the potato cakes with dollops of soft cheese and a slice of smoked salmon.
  • Finally, sprinkle red onions, capers and lemon zest over the potato pancakes.
