  • 550g potatoes
  • 1 onion
  • 2 tbsp olive oil
  • 4 eggs
  • 1 red chili pepper, deseeded and finely chopped or a pinch of dried chili pepper
  • 2 tablespoons coarsely chopped fresh coriander, optional
