  • 1 tbsp vegetable oil or sunflower oil
  • 400 ml pomegranate juice
  • 1 cinnamon stick
  • ¼ tsp ground allspice
  • 1 lemon, juiced and peeled into strips
  • 3 tbsp honey
  • 3 tbsp red wine vinegar
  • 8 slices of pork belly (approx. 750 g)
  • 50g pomegranate seeds
  • green vegetables or a fresh grain salad for serving (optional)

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Heat the oil in a wide, shallow ovenproof dish (or use a roasting pan that can be placed on the stove).
  3. Mix pomegranate juice, cinnamon, allspice, lemon juice, honey and red wine vinegar in a large bowl.
  4. Sear the pork for 2-3 minutes on each side.
  5. Add all other ingredients, season and bring to a simmer.
  6. Cover with a lid or wrap the dish in foil.
  7. Place in the oven and bake for 1 hour.
  8. Cover the dish, remove the pork and set aside.
  9. Skim off the fat and place the dish on the stove.
  10. Allow the sauce to reduce to a sticky glaze.
  11. Return the pork to the bowl and baste.
  12. Increase the temperature to 180°C/160°C, fan/gas 4.
  13. Place the dish back in the oven and continue cooking for another 45-50 minutes.
  14. Remove from the oven and sprinkle with pomegranate seeds.
  15. If desired, serve with green vegetables or a fresh grain salad.
