- 1 tbsp vegetable oil or sunflower oil

- ¼ tsp ground allspice
- 1 lemon, juiced and peeled into strips
- 3 tbsp honey
- 3 tbsp red wine vinegar
- 8 slices of pork belly (approx. 750 g)
- 50g pomegranate seeds
- green vegetables or a fresh grain salad for serving (optional)

- Sear the pork for 2-3 minutes on each side.
- Add all other ingredients, season and bring to a simmer.
- Cover with a lid or wrap the dish in foil.
- Place in the oven and bake for 1 hour.
- Cover the dish, remove the pork and set aside.
- Skim off the fat and place the dish on the stove.
- Allow the sauce to reduce to a sticky glaze.
- Return the pork to the bowl and baste.
- Increase the temperature to 180°C/160°C, fan/gas 4.
- Place the dish back in the oven and continue cooking for another 45-50 minutes.
