Ingredients
- 4 small potatoes, sliced
- 1 tbsp olive oil
- 2 teaspoons fennel seeds, lightly crushed
- 4 beets, peeled and cut into wedges
- 4 pollack fillets
- Zest of half a lemon
- 4 tbsp crème fraîche
- small handful of basil, roughly chopped
Preparation steps
1. Preheat the oven to 200°C/180°C fan/gas 6.
2. Place the potatoes in a large baking tray.
3. Mix the potatoes with olive oil and fennel seeds.
4. Season the potatoes with salt and pepper.
5. Arrange the potatoes in a single layer on the baking sheet.
6. Bake the potatoes for 20 minutes until soft and crispy.
7. Turn the potatoes over.
8. Place the beets on the baking tray.
9. Season the beetroot with salt and pepper.
10. Place the baking tray back in the oven for 15 minutes.
11. Place the fish in the center of the baking tray.
12. Season the fish well with salt and pepper.
13. Rub some oil from the tray over the fish.
14. Place the baking tray back in the oven for 10 minutes.
15. Sprinkle the lemon peel over the crème fraîche.
16. Grind some black pepper over the lemony crème fraîche.
17. To serve, sprinkle basil over the fish.
18. Pour some of the lemony crème fraîche onto the fish.
