  • 1l broth (one cube is enough)
  • 1 large onion
  • 1 head fennel, sliced
  • 1 large carrot, sliced
  • 2 bay leaves and 2 sprigs of rosemary
  • 500g beef fillet
  • 100g bag of watercress
  • 4 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 50g chopped walnuts
