- 250g pack of butter (this must be very cold)
- 225g powdered sugar
- 300g ground almonds
- 140g flour, plus 25g/1oz
- 2 eggs
- 1 tsp cinnamon
- 1 teaspoon Baking powder
- about 6 plums, pitted and cut into sixths
- 50g almond flakes
Do it by hand
If you don’t have a food processor, rub the ingredients together with your fingers for Step 1. Place the bowl in the refrigerator for 10 minutes if the butter becomes greasy. For the rest of the recipe, use an electric beater or a wooden spoon and mixing bowl.
- Preheat the oven to 180°C/fan 160°C/gas 4.
- Grease a 20 x 30 cm baking tin and line it with baking paper.
- Place the butter, sugar and ground almonds in a food processor and pulse until the mixture resembles very coarse breadcrumbs.
- Place half of the mixture in a bowl and set aside.
- Add 140 g flour to the food processor and mix until a dough forms.
- Pour the dough into the mold and press it down with the back of a spoon.
- Bake until golden brown, 15-20 minutes.
- Allow to cool for 10 minutes.
- To make the filling, add the remaining butter and sugar-almond mixture back to the mixer, reserving a few tablespoons for the topping.
- Put the eggs, 25 g flour, cinnamon and baking powder in the food processor and mix into a soft dough.
- Spread the dough on the floor.
- Top with the plum pieces and some additional powdered sugar and cinnamon.
- Bake for 20 minutes.
- Sprinkle with the remaining streusel mixture and the flaked almonds.
- Cook for another 20 minutes or until golden brown.
- Allow to cool in the tin before cutting.
