Preparation steps

  9. Cover with a tea towel and let rise for another 30 minutes until tender.
  10. Preheat oven to 200°C/180°C fan/gas 6.
  11. Trim the ends and then cut the dough into 6 equal slices.
  12. Transfer to a floured baking sheet, cut sides down.
  13. Fold the bottom edges down a little so that the filling doesn’t leak out underneath and the top opens like a handbag.
  14. Slide the tomatoes and remaining cheese on top.
  15. Bake for 25 minutes or until the cheese is dark golden brown and bubbling.
  16. Cool.
  17. Store in an airtight container for 2 days.
