Preparation steps

  1. Place milk and butter in a small saucepan and heat gently until the butter melts. Let sit for 5 minutes or until milk is just warm to the touch.
  2. In the meantime, mix together the flour, yeast and 1 teaspoon of salt.
  3. Mix the wet ingredient with the dry, then let it stand for 10 minutes to allow the liquid to work on the flour – so you don’t have to knead it for a long time later.
  4. After 10 minutes, place the dough on a floured work surface and knead briefly until it is elastic and smooth.
  5. Place in an oiled bowl, cover with oiled cling film and let rise for 40 minutes until doubled in size.
  6. Roll out the dough on a floured work surface into a rectangle about 40 cm wide and 30 cm high.
  7. Spread the mustard over the dough and then spread two-thirds of the cheese evenly over it.
  8. Fold the top third of the dough down and then the bottom third up, creating a sort of long, thin envelope.
  9. Cover with a tea towel and let rise for another 30 minutes until tender.
  10. Preheat oven to 200°C/180°C fan/gas 6.
  11. Trim the ends and then cut the dough into 6 equal slices.
  12. Transfer to a floured baking sheet, cut sides down.
  13. Fold the bottom edges down a little so that the filling doesn’t leak out underneath and the top opens like a handbag.
  14. Slide the tomatoes and remaining cheese on top.
  15. Bake for 25 minutes or until the cheese is dark golden brown and bubbling.
  16. Cool.
  17. Store in an airtight container for 2 days.
