Ingredients

  • 1 tbsp oil
  • 1 large garlic clove, crushed
  • ½ tsp dried oregano
  • 400 g can of plum tomatoes, drained and mashed
  • 1 tbsp tomato paste
  • 2 x 320g sheets of ready-rolled shortcrust pastry
  • 250g grated mozzarella
  • 80g pepperoni, chopped
  • 160g pack of stuffed green olives, halved
  • 1 egg, beaten

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Heat the oil in a saucepan, add the garlic and oregano and cook for 1 minute until fragrant.
  3. Stir in tomatoes and tomato puree and cook over high heat until thickened, about 5 minutes.
  4. Roll out the dough, quarter each sheet and arrange on two baking sheets.
  5. Spread some tomato sauce over half of each quarter, leaving about a 1/2-inch border.
  6. Top with the cheese, followed by pepperoni and olives (this will prevent the cheese from sticking to the top of the dough as it melts).
  7. Brush the edges with egg, fold the open dough half over it, and press the edges with a fork to seal.
  8. If you have time, leave the bags in the fridge for at least 15 minutes to firm up.
  9. Before baking, make a hole in the top of the pockets and brush them with a little more egg.
  10. Bake for 20 minutes or until golden brown.
