  • 100g pistachios
  • 140g golden powdered sugar
  • 140g butter, very soft
  • 2 eggs
  • 140g self-raising flour
  • 5 tbsp milk
  • edible glitter, for decorating
  • 250g powdered sugar, sifted
  • mint green food coloring

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas mark 3 and line a 12-hole muffin tin with liners.
  2. Put 85 g of pistachios with about half the sugar in a food processor and chop very finely.
  3. Add remaining sugar, butter, eggs, flour and milk to a large mixing bowl and stir until smooth.
  4. Divide between the ramekins and then bake on a low rack for 22-25 minutes, until a skewer inserted comes out clean.
  5. Cool on a wire rack.
  6. To make the glaze, mix just enough water with the powdered sugar to create a very thick, yet runny glaze – just add 1 tablespoon of water at a time.
  7. Stir in enough food coloring to create a nice light green color.
  8. If cakes overhang the top of the cake pan, trim them with a small knife or scoop them out with a teaspoon. Be careful not to let any of the cake pan come away from the sides of the cake.
  9. Place a generous spoonful of frosting on each cake and gently spread until coated.
  10. Chop the remaining pistachios and sprinkle with a pinch of edible glitter.
  11. Allow to set, then serve.

The Health Benefits of Pistachio Cupcakes

Pistachio cupcakes not only delight the taste buds with their delicious taste and attractive appearance but also offer several health benefits. From providing essential nutrients to promoting heart health, these delicious treats can be a guilt-free treat. Let’s explore some of the health benefits that make pistachio cupcakes a great choice for your dessert cravings.

1. Rich in nutrients

Pistachios, the main ingredient in these cupcakes, are packed with essential nutrients. They are an excellent source of healthy fats, proteins, fiber and antioxidants. These small green nuts provide a good amount of vitamins and minerals, including vitamin B6, thiamine, phosphorus and potassium, which have a positive effect on your overall well-being.

2. Heart-healthy good fats

Unlike many traditional cupcakes that contain unhealthy fats, pistachio cupcakes can be made with healthier alternatives like butter. Pistachios themselves are known for their heart-healthy fats, primarily monounsaturated and polyunsaturated fats. These fats help maintain healthy cholesterol levels and reduce the risk of heart disease when consumed as part of a balanced diet.

3. Rich in antioxidants

Antioxidants play a crucial role in protecting your body from the damaging effects of free radicals. Pistachios are a rich source of antioxidants, including lutein, zeaxanthin and gamma-tocopherol. These antioxidants help fight inflammation and oxidative stress, contributing to overall health and reducing the risk of chronic disease.

4. Supports weight management

When it comes to weight management, pistachio cupcakes can be a better choice compared to regular cupcakes. The combination of proteins, fiber, and healthy fats in pistachios can help you feel full and satisfied for a longer period of time, reducing the risk of overeating. In addition, the fiber content promotes digestion, supports a healthy intestine and helps maintain a healthy weight.

5. Energy source

Pistachios provide an excellent energy boost due to their high content of healthy fats, proteins and carbohydrates. Including pistachio cupcakes in your diet can help replenish your energy levels and stay energized throughout the day. They’re a delicious snack option and an instant pick-me-up when you need it most.

So next time you’re craving a delicious dessert, you might want to treat yourself to pistachio cupcakes. Not only will you satisfy your sweet tooth, but you’ll also treat your body to a range of health benefits. Remember to enjoy them in moderation and enjoy every bite without feeling guilty!
