Ingredients

  • 100g pistachios
  • 140g golden powdered sugar
  • 140g butter, very soft
  • 2 eggs
  • 140g self-raising flour
  • 5 tbsp milk
  • edible glitter, for decorating
  • 250g powdered sugar, sifted
  • mint green food coloring

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas mark 3 and line a 12-hole muffin tin with liners.
  2. Put 85 g of pistachios with about half the sugar in a food processor and chop very finely.
  3. Add remaining sugar, butter, eggs, flour and milk to a large mixing bowl and stir until smooth.
  4. Divide between the ramekins and then bake on a low rack for 22-25 minutes, until a skewer inserted comes out clean.
  5. Cool on a wire rack.
  6. To make the glaze, mix just enough water with the powdered sugar to create a very thick, yet runny glaze – just add 1 tablespoon of water at a time.
  7. Stir in enough food coloring to create a nice light green color.
  8. If cakes overhang the top of the cake pan, trim them with a small knife or scoop them out with a teaspoon. Be careful not to let any of the cake pan come away from the sides of the cake.
  9. Place a generous spoonful of frosting on each cake and gently spread until coated.
  10. Chop the remaining pistachios and sprinkle with a pinch of edible glitter.
  11. Allow to set, then serve.
