Ingredients

  • 140g peeled pistachios
  • 200g milk chocolate, broken into pieces
  • 200g golden powdered sugar
  • 200g very soft butter
  • 3 eggs
  • 200g self-raising flour
  • 100 ml milk
  • 150 ml sour cream

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Line a 20 cm diameter square cake tin with baking paper.
  3. In a food processor, finely chop 125 g pistachios, 75 g chocolate and half the sugar.
  4. Place the chopped ingredients in a bowl and add the remaining sugar, butter, eggs, flour, milk and a pinch of salt.
  5. Beat the mixture until well blended.
  6. Pour the mixture into the prepared pan and smooth the surface.
  7. Bake for 35-45 minutes or until a skewer inserted into the center comes out clean.
  8. Allow the cake to cool.
  9. Melt the remaining milk chocolate.
  10. Stir in the sour cream and allow to cool until it forms a spreadable consistency.
  11. Trim the edges of the cooled cake.
  12. Divide the cake in half horizontally.
  13. Spread a thin layer of chocolate icing on the cake base.
  14. Place the top half of the cake back on the base.
  15. Spread the remaining icing on top of the cake.
  16. Roughly chop the remaining pistachios.
  17. Scatter the chopped pistachios over the glaze.
  18. Cut the cake into 16 equal squares.
  19. Serve and enjoy!
