Piri-Piri Fish & Chips with spicy peas

Ingredients

  • 375g potatoes, cut into chips
  • 1 tbsp olive oil
  • Juice ½ lemon
  • 2 tbsp piri piri marinade
  • 300g frozen peas
  • 1 green chili pepper, deseeded and finely chopped
  • ½ garlic clove, crushed
  • a handful of mint leaves, finely chopped
  • 2 white fish fillets (we used sea bass)

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Mix the chips with half the olive oil and half the lemon juice.
  3. Arrange the chips in layers on a baking tray and season.
  4. Cook the chips in the preheated oven for 25 minutes.
  5. Stir the remaining lemon juice into the marinade.
  6. While the chips are cooking, bring a pot of water to a boil.
  7. Cook the peas in boiling water for 2-3 minutes, then drain.
  8. Return the peas to the empty pan and mash them with the chilli, garlic, mint and remaining oil.
  9. Season the crushed peas and keep warm.
  10. After 25 minutes, turn the potatoes and push them to the edge of the tray.
  11. Place the fish on the tray, skin side up.
  12. Pour the marinade over the fish.
  13. Cook the fish in the oven for another 10-12 minutes, or until cooked through.
  14. Serve the piri piri fish with the crushed peas.
