  • 250 ml game or beef broth

Preparation steps

  1. Bring a pot of water to the boil.
  2. Cook the cabbage leaves for 1 minute.
  3. Drain the cabbage leaves and place them in cold water.
  4. Once the cabbage leaves have cooled, drain them and pat them dry with paper towels.
  5. Heat oil and butter in a large frying pan.
  6. Fry the pigeon until browned, about 30 seconds on each side.

  32. To serve, carefully cut each cake in half so you can see the cross-section of the breast.
