Ingredients

  • 2 pigeon breasts, skin removed

  • 2 tsp Dijon mustard
  • 1 tbsp apple cider vinegar

  • 2 large handfuls of mixed lettuce leaves
  • small handful of parsley leaves
  • 100g blackberries

Preparation steps

  2. Prepare the dressing by mixing oil, mustard and vinegar with the finely chopped chives, a small splash of water and some spices. Put aside.
  3. Heat a frying pan, dry fry the hazelnuts and set aside.
  4. Place the pan back on the stove and fry the pigeon breasts for 2-3 minutes on each side until plump.
  5. Let the pigeon breasts rest for 5 minutes.
  6. When the pigeon is rested, place it on a cutting board.
  7. Mix the salad ingredients together with the chopped chives and a dash of dressing in a bowl.
  8. Arrange the salad mixture in the middle of 2 plates.
  9. Cut the pigeon breasts into thin slices and arrange around the salads.
  10. Pour the rest of the dressing on top and serve.
